Bircher Muesli
It's snowing, again. I thought the ground hog said winter was over. I guess he was wrong. I'm seriously thinking about kicking him for getting my hopes up. I'm that tired of winter.
And when I am cold, I don't want to move. I don't want to clean, do laundry go to work, or even cook. Sadly, my family still thinks I am supposed to feed them. Rude, right?
So after lying on the couch under a pile of blankets perusing my cookbooks, I decided to make easy breakfasts for the week. I found this recipe for Bircher Muesli in my cookbook, Clean Green Eats by Candice Kumai.
If you are unfamiliar with muesli, you are not alone. It was a introduced in the 1900s by Dr. Maximilian Bircher-Benner, who prescribed his patients a diet rich in fruits and vegetables as part of their therapy. It is very similar to overnight oats, but we will call it whatever the cookbook says.
Bircher Muesli
Ingredients
- 1 3/4 c rolled oats
- 1 c Simply Apple juice
- 1/4 c unsweetened shredded coconut
- 1 c Nature's Garden Heart Healthy trail mix
- 1 c vanilla Greek yogurt
- 1 Honeycrisp apple, cubed
- 1/2 tsp nutmeg
Directions
- In a medium bowl, combine the oatmeal and apple juice. Cover it and put it into the refrigerator overnight.
- Transfer the oatmeal to a large serving bowl. Top with all the other ingredients. Divide into 4 portions, and enjoy.

My mother in law told me this was the best oatmeal she'd ever had. My husband liked it better without coconut. I personally loved it. It gave me the energy I needed to start my day, and I stayed full until dinner.
You can lessen the calories by changing the trail mix and yogurt brands. Play with it and let me know your preferred combinations.
