Lemon Pepper Seared Halibut

Be impressed. It has only been four days since my last post. Between the holidays, work, kids and emotional storms, I was expecting it to be another week. But, since I had a day off, and I made a fabulous, healthy dinner,  I couldn't wait to share.


What you are looking at is Lemon Pepper Seared Halibut, loaded cauliflower and steamed asparagus. Mmmmmm. I got the idea from watching Top Chef a couple weeks ago, and am just now getting around to making it. You remember in that first episode of season 1 when the chef's had to make their signature dish? Ken was sent home for his seared halibut and nasty puree.


I personally love halibut as a main course. Done right, it has a butter texture and a mild flavor that picks up seasonings very well. My chosen seasoning tonight is lemon pepper. I am not a fan of tartar sauce, but I love citrus with my seafood, and the slight kick of McCormick Lemon Pepper is just what this fish needed. I also rub some garlic powder on the fish before searing to add a little extra flavor.


After seasoning the halibut steaks, I melted butter in a cast iron skillet. Next I added the fish and cooked it for 4 minutes on each side. Remove to plates and allow to rest for 2 minutes. That's it. Pick your sides and enjoy. It's really that simple.

Lemon Pepper Seared Halibut

Ingredients

  • 2 TBSP lemon pepper
  • 1 TBSP garlic powder
  • 2 lbs halibut, fresh or thawed in the refrigerator if frozen (about 4 steaks)
  • 2 TBSP butter
  • 1 lemon, sliced for garnish
Directions
  1. Remove any excess moisture from the halibut, using paper towels. 
  2. Sprinkle 1/2 the lemon pepper and garlic powder over one side of the halibut. Press the seasonings into the fish. Repeat with the remaining seasons on the other side of the steak.
  3. Melt butter in a large cast iron skillet over medium heat. 
  4. Add the halibut steaks to the pan. Sear for 4 minutes on each side, or until it easily flakes with a fork. 
  5. Let rest for 2 minutes.Serve with lemon slices.
