No-Bake Chocolate Oatmeal Cookies

I know what you are thinking, "Cookies, AGAIN! That's two days in a row!" I know. I know. The thing is, it's Christmas time and cookies get sent to people as fast as I make them. Plus these cookies don't require the oven. Just drop them on a cookie sheet, throw them in the fridge and you are done.


I have been making these cookies since I was a little girl. The first time we made them, I was six and in Brownies. You start with oatmeal and coconut in a large mixing bowl. Perfect for little bears to stir together.


Then you add butter, milk, cocoa powder and sugar to a medium sauce pan. Place it on the stove, over low heat and let the butter melt.


Once the butter is melted, allow your mixture to simmer. Whisk it regularly to keep the chocolate from burning.


After five minutes of simmering, pour the chocolate into your mixing bowl of dry ingredients. Let your little person stir it together until all the dry ingredients are incorporated with the chocolate.



Then drop rounded tablespoonfuls of the "dough" onto a wax paper lined cookie sheet. Put the cookies in your fridge for 30 minutes and you are done. Yummy cookies to munch and share, and you didn't even have to heat up the house with your oven.

No-Bake Chocolate Oatmeal Cookies

Ingredients

  • 3 c rolled oats
  • 1 c shredded coconut
  • 1/2 cup butter
  • 1/2 c milk
  • 1/2 c cocoa powder
  • 2 c sugar
Directions
  1. Stir together the oatmeal and coconut in a large mixing bowl. 
  2. Place the butter, milk, cocoa and sugar in a medium saucepan over low heat. 
  3. As the butter melts, whisk the chocolate mixture so that it melts together. Continue whisking regularly, as the chocolate simmers for 5 minutes. 
  4. Pour the chocolate over the dry ingredients in the mixing bowl and stir until well combined. 
  5. Drop rounded tablespoons full of cookie dough onto a wax paper lined cookie sheet. Put them in the fridge for 30 minutes to harden.

I am aware that one and a half dozen cookies isn't very much. On the bright side, the oatmeal makes them filling and good for digestion. Plus if you are like me, you don't like having a ton of something in the house, because you get tired of it after a day or two.
